This week I celebrated the end of a grueling semester and the beginning of my three week break before another begins. It’s time to really enjoy the holidays and savor the joyful moments of December. What better way to do so then to start creating homemade goodies for friends and family? I love baking all year round but there is something about the holidays that gets me into the spirit to spread Christmas cheer through sweets! One of my favorite things to snack on this time of year is peanut brittle. It’s sweet, salty, and has the perfect crunch to it. I’ve been wanting to incorporate it into a recipe for the longest and when I came across the limited edition Planter’s Brittle Nut Medley I decided to take full advantage.
This Brittle Nut Medley is just that, a medley of delicious flavors and ingredients. Consider it the “everything but the kitchen sink” of snacks. It has honey roasted peanuts, yogurt flavored raisins, peanut brittle, pretzels, and cashews. It’s so good on its own but even better on top of chewy blondie bars! I made a batch of Brittle Nut Medley Blondie Bars earlier this week and they were gone by the second day. I could go on and on about how good they were but it may be more helpful to share how easy these were to make.
Ingredients:
- 1 cup of white chocolate chips
- 1/2 cup of Planter’s Brittle Nut Medley
- 3/4 cup of packed light brown sugar
- 3/4 cup of all purpose flour
- 1/2 tsp. salt
- 1 egg
- 1 tsp. pure vanilla extract
- 1 tsp. baking powder
Directions:
1. Preheat oven to 350° and line an 8×8 glass baking dish with parchment paper.
2. In large bowl combine flour, brown sugar, baking powder, and salt. Mix until clump free.
3. Add in egg and vanilla extract and beat on medium speed. Stir in 1/2 cup of white chocolate chips and continue to mix until all ingredients are blended together.
4. With clean fingers or a rubber spatula press mixture into dish. Bake for 25 minutes.
5. Remove from oven and allow to cool. Melt the remaining 1/2 cup of white chocolate chips and drizzle on bars. Immediately sprinkle Brittle Nut Medley generously on top of chocolate.
I have always been a sweet & salty snack person and let me tell you, these brittle bars hit the spot. I try to avoid gifting your typical baked goods like brownies and cookies for the holidays because that’s what everyone else does. I personally love when someone gifts me a tin of homemade peppermint fudge or coffee crumble cake bites, something different that I will remember! I find the best way to come up with a unique holiday recipe is to choose a main ingredient and go from there. That’s what I love about nuts, you can make just about anything from them and it will come out tasty.
