‘Tis the season to satisfy your hunger with delicious holiday dishes and desserts. In my family the real celebration starts in the kitchen and makes its way to a table filled with those we care about. Whether you are cooking for friends or family, side dishes are just as important as the main course. Our menu is typically the same every year and always includes a big juicy turkey. After all, if it isn’t broke don’t fix it! My mom makes her killer sweet potato souffle and I am usually in charge of the sweets. This year I decided that I would take on the potato dish as well and add my own twist to a classic using Betty Crocker™ Potatoes.
Betty Crocker™ Potatoes come in 11 different varieties and while each is tasty on its own, they can easily be upgraded with your own mix ins. Rather than eating the same mashed potatoes that we always have I am going to be preparing Three Cheese Scalloped Cowboy Potatoes this year. This recipe is extremely simple to make thanks to Betty Crocker™. It’s packed with bold flavors from the cheesy potatoes, bacon, fried onions, and tangy BBQ sauce. I made this dish twice this week, that’s how good it turned out!
Ingredients:
- 1 box of Betty Crocker™ Three Cheese Scalloped Potatoes
- 2 cups of boiling water
- 2/3 cup of milk
- 1 tablespoon of butter or margarine
- 1/2 cup barbecue sauce
- 1/2 cup sharp cheddar cheese
- 1 cup crispy fried onions
- 8 slices of cooked bacon
Directions:
1. Pre-heat oven to 450°. Add sauce mix, boiling water, milk, and softened butter in medium sized casserole dish. Whisk together until blended and stir in potatoes. Bake for 25 minutes or until top is golden brown and potatoes are softened. Allow to stand until sauce has thickened.
2. Add barbecue sauce and 1/2 cup crunchy fried onions on top.
3. Mix together and distribute ingredients evenly throughout the scalloped potatoes.
4. Top potatoes off with remaining crunchy onions, shredded sharp cheddar cheese, and pieces of bacon. Serve and enjoy.
You can also drizzle additional barbecue sauce on top for an extra kick. To make this dish more interactive for guests, provide them each a small dish with a generous serving of the scalloped potatoes. Set up a topping bar with bacon, crispy onions, shredded cheese, veggies, different BBQ sauce flavors, etc.
