Resolution season is here and a new year means a fresh start for all of us. Rather than make resolutions I hope to accomplish I came up with a realistic list of goals that I can work towards throughout the year of 2015. Number 6 on that list is eating healthier and trying new foods, specifically vegetables. Letting go of unhealthy eating habits doesn’t necessarily happen over night. It’s a work in progress and with the right amount of effort it will become a lifestyle instead of a chore. I’ve started working towards these goals by purchasing Weight Watchers endorsed products at Publix and getting creative in the kitchen.
Being healthy doesn’t mean you have to give up your favorite meals. You can still enjoy them by finding alternative ways to cut the calories while keeping them tasty. One of my weaknesses is comfort food, chicken pot pies to be more specific. With the help of Progresso Light Soups I am able to enjoy a lighter version of this classic meal. Their savory Chicken Pot Pie style soup is chunky, hearty and deliciously creamy. Substituting the typical buttery crust with a few filo sheets makes it taste even closer to the original recipe without the unwanted calories. Such an EASY recipe and still very yummy.
Ingredients:
- 1 (18.5 oz) can of Progresso Light Chicken Pot Pie soup
- 1 cup of shredded rotisserie chicken breast
- 3-4 filo dough sheets
Directions:
1. Preheat oven to 350 degrees. Pour can of soup into a ceramic ramekin. Add desired amount of extra shredded chicken. Cut a few pieces of filo dough into the shape of a circle, big enough to cover the top of the dish. Place in oven for 15-20 minutes or until top begins to brown and soup is bubbly.
*The Progresso Light Chicken Pot Pie soup does contain pieces of white chicken so adding more is completely optional. I like mine to be thick and chunky. You can always incorporate additional veggies too!
