Despite all of the gloomy weather that has taken over South Florida lately I am still looking forward to a summer full of sunshine and outdoor fun. Hopefully by the time school lets out next month the rain clouds will have passed and we will be able to enjoy what Florida is known for, warm beautiful weather. While the days are still generally hot, in the high 90’s, we have been spending more time inside to avoid the rain, mud, and mess that greets us when we venture into the backyard. Keeping the excitement indoors, a S’mores Summer awaits us!
You’re probably wondering what a S’mores Summer entails. Lately I’ve been brainstorming creative ways to keep us busy and prepare for our mini stay-cation ahead. When I was in elementary school I loved this time of year because it meant two things, camping trips with my Girl Scout troop and S’MORES! Yes, S’mores- those sweet ooey gooey marshmallow stuffed sandwiches we all grew up with. If you’ve never had a S’more then I hate to tell you this but you my friend are missing out on life. These treats were an easy dessert to create then and still are today, indoors or outdoors. You don’t need a campfire to enjoy this quick solution for summertime fun. Rain or shine, you can build your own S’mores and mini campfire inside.
The traditional S’more has always included three things- ooey gooey toasted marshmallow, milk chocolate, and two crisp graham crackers. This iconic sandwich is delicious in its original form but after traveling down Girl Scout memory lane I remembered another way to enjoy this dessert. Banana Boat S’mores were always a campfire favorite. To make them you would place a slightly sliced banana on tin foil, stuff it with marshmallow and chocolate, wrap it up, cook over the fire, and sprinkle crushed graham crackers on top. They were so good! This inspired me to add not only banana to my recipe but also peanut butter because who doesn’t love the two together? Elvis sure did.

Peanut Butter Cup Banana S’mores are sure to sweeten up the Summer and here is what you will need to make this treat indoors, no fire required, and in less than 10 minutes.
Ingredients:
- Honey Maid Graham Cracker Squares
- Hershey’s Milk Chocolate bars
- Reese’s peanut butter cups
- Kraft’s Jet Puffed Marshmallows
- bananas
Directions:
1. Preheat oven to 350 degrees.
2. Line baking sheet with parchment or wax paper. Break graham crackers into two pieces and place in rows on baking sheet. Top with three pieces of milk chocolate.
3. Cut marshmallows in half and place the two pieces flat on top of chocolate. Bake for 5 minutes or until marshmallows begin to slightly expand.
4. Cut banana into thin pieces and top each S’more with 2-3 slices.
5. Add peanut butter cup on top along with another graham cracker to form a sandwich. Return to oven for an additional 3-5 minutes.
You can reinvent the S’more in many different ways but I assure you that this combination of chocolate, marshmallow, and salty peanut butter will bring sunshine to any rainy day!
Baking S’mores is a child friendly activity that the whole family can participate in whether you are camping in the backyard or utilizing the heat indoors with the oven. Until the weather clears up here we will be enjoying this sweet treat inside snuggled under the blankets.
To go with our tasty S’more spin off we also worked on a campfire craft using sticks from the backyard, colored construction paper, and cotton balls as marshmallows. This is a fun way to bring the idea of camping indoors and encourage creativity in your little ones, especially if they have never experienced a campfire or making S’mores.
Give each child or family member glue, a sheet of white paper, handful of sticks, a few cotton balls, and pieces of construction paper in yellow, orange, and red to create their own campfire. The Peanut Butter Cup Banana S’mores are a great snack to serve while doing so.
S’mores are a “feel good” kind of dessert that are tasty any time of the year, indoors or outdoors. If you don’t have a fire pit at home or a camping trip isn’t in near sight a few heating alternatives include a fireplace, toaster oven, microwave, or oven. Weeks of crummy weather were enough motivation to bring our love for S’mores inside and we weren’t about to let a few rain clouds stop us from preparing for summer.
For even more fun you can pitch a small tent or create a fort using blankets, sheets, and pillows in your living room. Everyone can wear their favorite pajamas and snack on S’mores while sharing spooky stories or playing board games. There are many ways to enjoy camping indoors with your family, these are just a few.

YUM. I've been seeing a lot of people using Peanut Butter Cups as well for Smores is this the new thing? Am I missing something? It must be really good. I just saw on Facebook they made a Smores Dip with peanut butter cups too. Delicious. I need to try this but I'm loving the bananas as well.
