When school ended I had convinced myself that the next few months were going to be a breeze. How hectic could Summer really be? This is suppose to be the one time of the year where we can sit back, relax, and treat each day as a spontaneous adventure. Besides not having to wake up obnoxiously early everyday, I haven’t had to put too much effort into dragging my daughter out of bed each morning. We’ve kind of been playing it by ear and enjoying our time together. Even with a relaxed schedule in place I make sure that breakfast time is still recognized as the most important meal of the day. After all, we need something to get us charged up after being lazy bums. Breakfast is my favorite meal anyways and it’s one that you will never have to force me to participate in, even on the busiest of days.
Speaking of busy days, this past weekend was more eventful than usual and we really didn’t have much time to get a good meal in before it began. Saturday we spent the whole day at the local science museum, which is by far one of my favorite spots here in Florida during the Summer because it’s interactive and educational. Knowing that we were going to be out and about for the weekend I stocked up on the new Quaker® Real Medleys® Yogurt Cups on my last trip to Walmart while strolling through the cereal aisle. The night before I made sure I had one ready to go along with a batch of my Cinnamon Streusel Cheesecake Muffins.
These two simple breakfast solutions are ideal for active days because they don’t take much effort and can be prepared in a cinch. Now I understand the meaning of “Crunchy, Cool, Yum!” A high quality breakfast is right at your finger tips.
The new Quaker® Real Medleys® Yogurt Cups come in three different tasty flavors to help you get your whole grains in for the day- Strawberry Almond, Apple Cinnamon, and Raspberry Pecan. Real Medleys contain a blend of yogurt and multi-grain granola with real fruit and crunchy nuts. Preparation is convenient and couldn’t be easier, especially for busy bodies on the go. All you have to do is just add cold milk, stir, and eat. On the crazy days in which breakfast seems impossible these are the perfect alternative because they give me an energy boost and contain 25 grams of whole grains along with 10 grams of protein. Fulfilling and delicious at the same time makes these a win-win for mom. For once I am not counting the hours until lunch rolls around.
Since I knew we would be gone a majority of the weekend I also prepared my favorite Cinnamon Streusel Cheesecake Muffins to make the mornings even easier. Just as convenient as the Quaker® Real Medleys® Yogurt Cups, these can be made before hand. Grab and go seems to be the theme here and let me tell you, I LOVE not having to stress about breakfast in the morning.
Ingredients:
Cinnamon Muffins
- 2 cups all-purpo
- 3/4
- 1/2 cup of m
- 1/4 cup li
- 1 tbsp. baking powder
- 1 tbsp.
- 1 tsp. vanilla extract
- 1/
- 1 beaten egg
Cheesecake Filling
- 6 oz. softened cream cheese
- 1 egg
- 4 tbsp
- 1 tsp. vanilla extract
- 1 tsp. c
Streusel Topping
- 1
- 2 tbsp.
- 2 tbsp.
- 3/4 tsp. cinnamon
- pinch of salt
Directions:
1. Preheat oven to 400 degrees.
2. Prepare streusel crumble by adding flour, brown sugar, and cinnamon in bowl. Toss in small pieces of butter and mix until crumbs begin to form. Place to the side.
3. In large mixing bowl combine flour, sugar, milk, butter, baking powder, cinnamon salt, vanilla, and beaten egg. Mix all ingredients together until well blended.
4. For cheesecake filling beat cream cheese, sugar, cinnamon, vanilla and egg together until smooth.
5. Line cupcake or muffin tin with liners and fill each with 1 tbsp. of muffin batter.
6. Add 1 tbsp. of cheesecake filling on top and use a rubber spatula or spoon to spread across.
7. Cover the cheesecake layer with another tablespoon of muffin batter. Top with streusel crumbles and place in the oven for 15-18 minutes.
The cheesecake filling makes a huge difference in this recipe because it keeps the muffins moist inside and also adds a rich creamy texture to each bite. Since my sweet tooth doesn’t know how to tell time I’ll admit that I have been snacking on these morning, noon, and night.
You can tweak the recipe to your liking and even add a few extra ingredients such as fresh fruit or nuts.
