It is true that yummy food brings people together and is often the center of any social gathering. If your family and friends love to eat as much as mine do, they will go crazy for these Roasted Parmesan and Garlic Truffle Potatoes. Without a doubt, they’re incredibly addicting and flavorful!
ROASTED PARMESAN AND GARLIC TRUFFLE POTATOES
This recipe is simple, yet delicious. In fact, many of the necessary ingredients are spice drawer staples that you probably have on hand. If not, you can pick up the McCormick® spices at your local Walmart. Despite a strong disdain for mushrooms, my favorite addition is the truffle oil. My obsession with this stuff is REAL. Truffle oil adds a unique and very distinctive burst of flavor to the dish, complimenting the fresh garlic and helping to achieve the crispy coating on the outside of each potato.
Here’s what you need:
- olive oil
- 1-1/2 pounds of diced red potatoes
- 1/4 cup grated Parmesan cheese
- 2 tablespoons truffle oil
- 1 tablespoon corn starch
- 1/2 teaspoon minced garlic
- 1 teaspoon McCormick® Paprika Powder
- 1 teaspoon McCormick® Onion Powder
- 1/2 teaspoon McCormick® Garlic Powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon McCormick® Ground Black Pepper
- dried McCormick® Parsley Flakes
How to make this insanely good recipe:
Preheat oven to 400 degrees. Use cooking spray to lightly grease a baking sheet or line with parchment paper.
Wash, dry, and dice potatoes into 1 inch bite-sized cubes. Pat with a paper towel to remove any excess moisture before transferring to a large bowl.
Toss pieces of potatoes in truffle oil until evenly coated.
Add cornstarch, McCormick® seasonings, Parmesan cheese, and fresh garlic. Continue to toss.
Transfer potatoes to baking sheet and spread apart until a single layer is formed. Sprinkle parsley on top.
Roast potatoes for 30-35 minutes or until golden brown and crispy. Also, be sure to flip the potatoes halfway through so they cook evenly.
Remove from oven and allow to cool for 5-10 minutes before tossing in truffle oil. Sprinkle sea salt on top for a finishing touch.

- whipped cream
- mini marshmallows
Directions:
Simmer all ingredients in a saucepan on medium heat, stirring until sugar is dissolved.
Transfer mixture into blender. Blend on medium speed until smooth and frothy.
