THE BEST THINGS IN LIFE HAVE CHEESE
Lately I’ve been craving creativity… and cheese, lots of cheese. My inner homebody has spoken. It’s been requesting slices of smoked Gouda and wine on the regular. It’s hard to remember the last time I’ve been home during the week and able to work on the blog without interruptions. I’m kind of getting used to this whole social-distancing thing, even though it’s a challenge to maintain sanity and productivity before noon!
With many of us hunkering down and doing our part to flatten the curve, it’s a great opportunity to reconnect with the kitchen. Put on an apron and whip up a quick snack for the family to enjoy. These airy wontons filled with a medley of creamy brie cheese and sweet blackberry compote are a tasty place to start!
THE PERFECT PAIR
There’s something undeniably perfect about brie and berries. Typically, brie cheese is paired with cranberry. However, I was excited to move in a different direction with this recipe. For the most part, the blackberry is underrated when compared to other fruits. After making homemade blueberry compote for my whipped honey goat cheese crostinis, I fell in love with the sweetness that darker berries deliver. If you’re a fan of raspberries, cranberries, or even strawberries- feel free to alter the compote filling as you like!
BLACKBERRY COMPOTE
The first step in this recipe is getting your compote ready. In a small sauce pan combine 2 cups of fresh blackberries, 1 tablespoon of lemon juice, 1/4 cup of white sugar, and a pinch of salt. Toss blackberries to ensure they are evenly coated. Allow the mixture to boil and then reduce heat to a simmer for 10-15 minutes. Once it begins to thicken, transfer to a glass jar and refrigerate until you are ready to use. For best results, allow the compote to chill over night or 1-3 hours before constructing wontons.
BRIE AND BLACKBERRY WONTONS
Preheat the oven to 350 degrees. Place a sheet of parchment paper on baking sheet or coat with a light spray of coconut oil. Line up wonton wrapper squares for filling. Cut the brie into small chunks and place one in the center of each. Top with a spoonfull of blackberry compote. Be careful not to overstuff!
With damp fingers, wet the edges of the wrapper. Pick up one corner and fold it in half to form a triangle shape. Pinch together to seal the wonton. Use a fork to crimp edges. Brush tops of triangles with egg wash. Bake for 10-15 minutes or until golden. Remove from oven and sprinkle powdered sugar on top.
