SUNNY WITH A CHANCE OF SPRINKLES
Grab your umbrella friends. Today in South Florida it’s sunny with a chance of sprinkles! Not your typical weather forecast, but most appropriate when colorful and magical jimmies are used in the kitchen. They add just the right amount of sparkle to any dessert, especially these Funfetti Cake Batter Donuts dipped in vanilla icing. Without a doubt, sprinkles are fun and you always need a lot of them. In fact, they can transform homemade treats into whimsy creations that are sure to brighten anyone’s day. These donuts are simple to make and full of bite-sized cuteness.
MINI FUNFETTI CAKE MIX DONUTS
For this recipe the ingredients are rather simple. You will need a box of Pillsbury Funfetti Cake Mix, Vanilla frosting, Wilton mini donut baking pan, and a rainbow sprinkle mix of your choice. I used the Twinkle Sprinkle Medley from Sweetapolita. It’s a vibrant mixture of candy beads, confetti, chocolate balls (Sixlets), edible shimmery stars, and other colorful shapes. In addition, make sure to have the basics on hand. These include eggs, vegetable oil, and cooking spray.
LET’S BAKE
Preheat oven to 350 degrees. In a large stand mixer prepare boxed cake mix according to the instructions on the back of the package. Spray the donut pan with non-stick cooking spray. Before adding in your batter, tap the pan a few times on the counter to release any air bubbles. This will prevent your donuts from having indents and craters on the bottom. Transfer the cake mixture to a piping bag or Ziploc. Snip a 1/2 inch tip at the end and pipe into circular cavities. Each should be about half way full to avoid spillage when the batter rises. Bake for 5-10 minutes. Keep a close eye on these bad boys. They cook FAST!
Allow to cool before decorating. In the meantime, scoop out vanilla icing into a microwave safe bowl. Heat for 60 seconds or until a drizzling consistency is achieved. Dip the top of each donut into the frosting and allow excess to fall off. Add sprinkles immediately!

Use a cake decorating bag or plastic sandwich bag to add batter to each ring shaped compartment of the donut pan, approximately 1/2 full. 4. Bake for 8-10 minutes or until donuts are cooked all the way through. These will cook faster than the given time on the box so keep an eye on them. Remove from the oven and allow to cool before icing. 6. Transfer vanilla icing to microwave safe bowl. Heat for 60 seconds or until a drizzling consistency is achieved. 7. Dip the tops of each donut into the frosting and allow excess to fall off. Add sprinkles immediately. Given the size of the pan, sometimes the mini donuts pop out and are missing a hole! This is an easy fix. Grab yourself a plastic straw and carefully puncture the center of the donut. Thank you! This is such a simple recipe too. Of course you can make your own batter and frosting, but we like to stick to the store-bought stuff. I absolutely LOVE my mini donut pan. You can make so many mini treats with it.
