This week I was given the opportunity to try a tasty bite sized snack called Brazi Bites. These are also known as cheese bread snacks in the form of balls. Brazi Bites are gluten-free, made of all natural ingredients, and ready to bake for your convenience. They come in three different flavors including Original, Fire Roasted Jalapenos, and Bacon. The ingredients are simple and the prep is effortless. After 20 minutes in the oven you have a crunchy on the outside, fluffy on the inside, bursting ball of flavor. Eat them as is or break them open and stuff them with your favorite cheese or hummus! They can even be used to dip into a hot bowl of soup or accompany a Summer time salad.

How did my Cinco De Mayo go this year? I don’t wanna TACO ’bout it…
Joking! I am happy to share with you my love for this short but sweet holiday and how I celebrated. This week I spent a good portion of time browsing the web viewing recipes for different variations of tacos, salsas, margaritas, and sopapillas. Tacos are one of those things I could eat any day of the week and never get tired of them, even if they’re in their simplest form. I received a big box of celebration goodies from Platefull Co-Op that included our favorite Old El Paso products along with a few I wasn’t familiar with. The Stand N’ Stuff Soft Flour Tortillas have been an essential for taco night’s at our home since we first discovered them. I love how they are the perfect shape and stand right up even after you stuff them with your favorite toppings. No broken shells. No leaky sauces. Just fold and eat! That’s my kinda taco.

Today marks the first day of Teacher Appreciation Week at Toodie’s school. Since she will be graduating from VPK in only a few short months I am happy to do what I can to show her two incredible teachers how much I appreciate them. It’s hard to believe that it’s been a year since we stepped foot into the school that helped my daughter learn, grow, and flourish. I am so sad to say goodbye to the teachers and staff that she has grown so close to. Kindergarten is right around the corner. Before we move on towards a new journey it’s only right to close out the year with recognition towards those that have helped pave the road for my little one to walk on.
